Ingredients
  

For the Chicken:
  • 4 –6 bone-in skin-on chicken thighs (or breasts if you prefer)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
For the Apple Cider Glaze:
  • 1 cup apple cider not apple juice
  • 2 tablespoons maple syrup or honey
  • 2 tablespoons Dijon mustard
  • 3 garlic cloves minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
  • 1 tablespoon unsalted butter optional for a glossy finish
Optional Garnishes:
  • Fresh thyme or rosemary sprigs
  • Sliced apples for serving
  • A sprinkle of flaky sea salt

Method
 

  1. Season chicken with salt and pepper, sear until golden on both sides.
  2. Build glaze with apple cider, maple syrup, Dijon, garlic, vinegar, and thyme.
  3. Simmer chicken in glaze until cooked through, basting often.
  4. Stir in butter for a glossy finish.
  5. Serve with extra glaze and herbs.
