Ingredients
  

For the Chicken
  • 4 bone-in skin-on chicken thighs
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
For the Roasted Potatoes & Mushrooms
  • 1 lb baby potatoes halved
  • 8 oz cremini or button mushrooms sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
For the Creamy Herb Sauce
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh dill chopped
  • 1 tbsp fresh chives chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp lemon juice

Method
 

  1. Season chicken and bake until golden and crispy.
  2. Roast potatoes and mushrooms with oil and spices.
  3. Simmer cream, garlic, and herbs for sauce.
  4. Plate chicken with sides, drizzle sauce, and serve hot.
