Beef and Barley Soup

Ingredients
  

For the Soup:
  • 1 1/2 lbs chuck cut into bite sized pieces
  • 3 tbsp olive oil
  • 2 cups onion chopped
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 2 tbsp garlic minced
  • 4 tbsp tomato paste
  • 8 cups beef broth
  • 1 cup pearl barley
  • 1 bay leaf
  • 1 tbsp Worcestershire sauce
  • 1 tbsp fresh thyme finely minced
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp Italian parsley chopped

Method
 

  1. Brown beef in oil and set aside.
  2. Cook onion, carrots, celery, and garlic.
  3. Stir in tomato paste and cook briefly.
  4. Add broth, seasoning, beef, and barley.
  5. Simmer until beef and barley turn tender.
  6. Finish with parsley and serve warm
