Beef & Cheese Empanadas

Ingredients
  

For the Beef Filling:
  • 1 lb ground beef 80/20 preferred
  • 1 tbsp olive oil
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 1 tbsp tomato paste
  • ¼ cup beef broth
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • Salt and black pepper to taste
For Assembling the Empanadas:
  • 1 ½ cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 packs empanada dough discs or homemade dough
  • 1 egg beaten (for egg wash)
Optional Toppings & Dips:
  • Fresh cilantro chopped
  • Sour cream salsa, or guacamole

Method
 

  1. Brown ground beef with onions, garlic, and spices.
  2. Stir in tomato paste and broth, simmer until thickened.
  3. Fill empanada discs with beef and cheese, fold and seal.
  4. Brush with egg wash and bake until golden.
  5. Serve warm with dipping sauces.
