Ingredients
  

For Cowboy Beans:
  • 1 lb ground beef
  • 6 slices bacon chopped
  • 1 large onion diced
  • 2 cloves garlic minced
  • 2 cans 15 oz each kidney beans, drained and rinsed
  • 1 can 15 oz pinto beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup BBQ sauce
  • ½ cup ketchup
  • ½ cup brown sugar
  • 2 tbsp mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
Optional Garnishes:
  • Fresh parsley chopped
  • Shredded cheddar cheese

Method
 

  1. Cook bacon until crisp, set aside.
  2. Brown ground beef in same pot, drain grease.
  3. Stir in onion and garlic, cook until softened.
  4. Add BBQ sauce, ketchup, brown sugar, mustard, Worcestershire, chili powder, paprika, salt, and pepper.
  5. Mix in beans and bacon, simmer 30 minutes.
  6. Serve hot with parsley or cheddar.
