Ingredients
  

For the Main Dish:
  • 1 tablespoon olive oil
  • 12 ounces smoked sausage sliced into rounds
  • 1 medium onion diced
  • 1 green bell pepper chopped
  • 3 cloves garlic minced
  • 1 cup long-grain white rice
  • 1 can 15 ounces black beans, drained and rinsed
  • 2 cups chicken broth
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper optional
  • Salt and pepper to taste
Optional Toppings:
  • Fresh cilantro chopped
  • Lime wedges
  • Sliced green onions
  • Hot sauce

Method
 

  1. Brown sausage in olive oil until golden.
  2. Add onions, bell pepper, and garlic; cook until soft.
  3. Stir in rice and spices, then add broth and beans.
  4. Simmer until rice is cooked and liquid absorbed.
  5. Fluff with a fork, garnish, and serve warm.
