Ingredients
  

For the Base and Topping:
  • 1 ½ cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • ½ cup brown sugar packed
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup melted butter or coconut oil
  • 1 teaspoon vanilla extract
For the Blueberry Filling:
  • 1 ½ cups fresh or frozen blueberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
Optional Add-ins:
  • Chopped walnuts or almonds
  • Flaxseed or chia seeds
  • Shredded coconut for extra texture

Method
 

  1. Cook blueberries with sugar, lemon juice, and cornstarch until thickened.
  2. Mix oats, flour, brown sugar, salt, and butter to form a crumbly base.
  3. Press part of the mixture into a baking pan, spread blueberry filling, and top with remaining oats.
  4. Bake at 350°F until golden, cool, and cut into bars.
