Ingredients
  

For the Pasta and Chicken:
  • 12 ounces spaghetti linguine, or penne
  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
For the Bruschetta Topping:
  • 3 cups cherry tomatoes halved
  • 2 cloves garlic minced
  • ¼ cup fresh basil leaves chopped
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar or glaze
  • Salt and pepper to taste
Optional Add-ins:
  • Freshly grated Parmesan cheese
  • Red pepper flakes for spice
  • Extra basil or parsley for garnish

Method
 

  1. Cook pasta until al dente, reserve pasta water.
  2. Mix bruschetta topping: tomatoes, garlic, basil, olive oil, balsamic.
  3. Cook chicken seasoned with Italian spices until golden. Slice.
  4. Toss pasta with bruschetta topping and chicken. Add pasta water if needed.
  5. Serve with parmesan, basil, and balsamic glaze on top.
