Ingredients
  

For the Skillet
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 medium butternut squash peeled and cut into small cubes
  • 1 red bell pepper chopped
  • 1 can black beans drained and rinsed
  • 1 can mild or medium enchilada sauce red or green
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese optional but delicious
Toppings (Optional)
  • Fresh cilantro
  • Sliced avocado
  • Lime wedges
  • Sour cream or Greek yogurt
  • Crushed tortilla chips

Method
 

  1. Sauté onion and garlic in olive oil until fragrant.
  2. Add squash and cook until slightly softened.
  3. Stir in spices and bell pepper.
  4. Pour in enchilada sauce and beans. Simmer until squash is tender.
  5. Add cheese if using.
  6. Serve warm with toppings.
