Ingredients
  

For the Quesadilla Melts:
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp mustard powder
  • Salt and black pepper to taste
  • 6 large flour tortillas
  • 2 cups shredded cheddar cheese or a mix of cheddar and mozzarella
  • ¼ cup dill pickles sliced
  • 2 tbsp butter for toasting
For the Burger Sauce:
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp pickle relish
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt to taste
Optional Toppings:
  • Crispy bacon crumbles
  • Caramelized onions
  • Jalapeño slices
  • Extra burger sauce for dipping

Method
 

  1. Make burger sauce and set aside.
  2. Cook seasoned ground beef until browned.
  3. Assemble tortillas with beef, cheese, pickles, and sauce.
  4. Toast quesadillas in butter until golden and crisp.
  5. Slice, drizzle extra sauce, and serve warm.
