Cheesy Burrito Casserole

A layered Tex-Mex inspired casserole with tortillas, beef, beans, salsa, and melted cheese baked into bubbly perfection.

Ingredients
  

For the Casserole:
  • 1 pound ground beef or ground turkey/chicken
  • 1 packet taco seasoning or homemade blend of chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper
  • 1 can black beans drained and rinsed
  • 1 can refried beans
  • 2 cups salsa your choice of mild, medium, or hot
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 8 small flour tortillas or corn tortillas for a twist
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
Optional Add-ins:
  • 1 cup cooked rice
  • 1 cup corn kernels
  • ½ cup diced green chilies
  • ½ cup sour cream or cream cheese for extra creaminess
  • Jalapeños or hot sauce for spice

Method
 

  1. Cook beef with onion, garlic, and taco seasoning. Stir in beans.
  2. Grease dish, spread salsa, and start layering tortillas, beef, beans, salsa, and cheese.
  3. Repeat layers until full, ending with tortillas, salsa, and cheese.
  4. Bake covered at 375°F for 25 minutes, then uncovered for 10–15 minutes.
  5. Rest 10 minutes, slice, and serve with toppings.
