Ingredients
  

For the Zucchini Breadsticks:
  • 2 cups grated zucchini about 2 medium
  • 1 large egg
  • ½ cup shredded mozzarella
  • ¼ cup grated parmesan
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • Salt and black pepper to taste
For the Topping:
  • 1 cup shredded mozzarella
  • ¼ cup grated parmesan
  • ½ tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbsp fresh parsley chopped (for garnish)

Method
 

  1. Grate and squeeze zucchini dry.
  2. Mix zucchini, egg, cheese, and seasonings into a base.
  3. Shape into a rectangle and bake 12–15 minutes.
  4. Top with cheese and seasonings, then bake another 8–10 minutes.
  5. Slice, garnish, and serve hot.
