Chicken Florentine

 Creamy skillet chicken with garlic, spinach, and Parmesan

Ingredients
  

  • 2 chicken breasts halved
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ tsp Dijon mustard optional
  • ½ cup Parmesan grated
  • 3 cups baby spinach

Method
 

  1. Slice and season chicken.
  2. Sear in oil and butter until golden. Remove from skillet.
  3. Sauté garlic, add broth, cream, and mustard.
  4. Stir in Parmesan and wilt spinach.
  5. Return chicken to the pan and simmer for 2 minutes. Serve hot.
