Ingredients
  

For the Sandwiches:
  • 2 cooked chicken breasts sliced or shredded
  • 4 slices of bread ciabatta, sourdough, or focaccia work best
  • 4 tablespoons basil pesto
  • 4 slices mozzarella or provolone cheese
  • 2 tablespoons mayonnaise optional, for creaminess
  • 1 tablespoon olive oil or butter for grilling
Optional Add-ins:
  • Sliced sun-dried tomatoes or roasted red peppers
  • Fresh arugula or spinach leaves
  • A sprinkle of Parmesan cheese
  • Crushed red pepper flakes for heat

Method
 

  1. Spread pesto (and mayo if using) on bread slices.
  2. Layer chicken, cheese, and extras.
  3. Grill in a buttered skillet for 3–4 minutes per side until golden and melty.
  4. Slice and serve warm.
