Ingredients
  

For the Chicken Scampi:
  • 1 ½ lbs boneless skinless chicken breasts cut into strips
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter divided
  • 5 garlic cloves minced
  • ½ cup chicken broth
  • ¼ cup dry white wine or more broth
  • Juice of 1 lemon
  • ½ tsp crushed red pepper flakes
  • Salt and black pepper to taste
  • ¼ cup chopped fresh parsley
For the Garlic Parmesan Rice:
  • 1 ½ cups long-grain rice
  • 3 cups chicken broth
  • 3 tbsp unsalted butter
  • ½ cup grated parmesan cheese
  • 3 garlic cloves minced
  • Salt and pepper to taste
Optional Toppings:
  • Extra grated parmesan
  • Lemon wedges
  • Chopped parsley

Method
 

  1. Cook rice with butter, garlic, broth, and parmesan.
  2. Sear chicken strips until golden.
  3. Make garlic scampi sauce with butter, broth, wine, and lemon.
  4. Toss chicken in sauce and serve over parmesan rice.
