Ingredients

For the Mug Cake:
  • 3 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • ¼ teaspoon baking powder
  • Pinch of salt
  • 3 tablespoons milk any kind
  • 1 tablespoon unsalted butter melted
  • ¼ teaspoon pure vanilla extract
For the Cinnamon Swirl:
  • 1 tablespoon brown sugar packed
  • ½ teaspoon ground cinnamon
  • ½ teaspoon unsalted butter melted
For the Cream Cheese Glaze:
  • 1 tablespoon cream cheese softened
  • 2 tablespoons powdered sugar
  • ¼ teaspoon pure vanilla extract
  • 1 –2 teaspoons milk to adjust consistency
Optional Toppings:
  • Extra sprinkle of cinnamon
  • Chopped walnuts or pecans
  • Mini chocolate chips
  • Whipped cream

Method

  1. Mix the Dry Ingredients: In a large microwave-safe mug (at least 12 ounces), whisk together the flour, granulated sugar, baking powder, and salt with a fork until no lumps remain. This ensures even rising and a uniform texture in your finished cake.
  2. Add Wet Ingredients and Combine: Stir in the milk, melted butter, and vanilla extract until the batter is smooth and just combined. Be careful not to overmix, as this can make the cake tough; a few small lumps are perfectly fine and will disappear during cooking.
  3. Create the Cinnamon Swirl: In a tiny bowl, mix the brown sugar, cinnamon, and melted butter until it forms a thick, paste-like consistency. This will be your gooey ribbon of flavor that runs through the cake.
  4. Layer the Swirl into Batter: Drop small spoonfuls of the cinnamon mixture onto the surface of the batter in the mug. Use a toothpick or knife to gently swirl it into the batter, creating marbled pockets of cinnamon sugar without overmixing, which keeps the swirl distinct and beautiful.
  5. Microwave to Perfection: Microwave the mug on high for 60–90 seconds, starting with 60 seconds and checking for doneness. The cake is ready when the top looks set and springs back lightly when touched, but still appears moist. Cooking times vary by microwave, so watch closely to avoid drying it out.
  6. Prepare the Glaze While Cake Cools: While the cake cools for 1–2 minutes, whisk together the softened cream cheese, powdered sugar, vanilla, and enough milk to reach a drizzle-able consistency. The residual heat from the cake will slightly melt the glaze, helping it soak in beautifully.
  7. Drizzle and Garnish: Pour or drizzle the cream cheese glaze over the warm mug cake, letting it pool in the cinnamon swirls and seep into the crumb. Add optional toppings like a sprinkle of cinnamon, chopped nuts, or a dollop of whipped cream for extra indulgence.
  8. Enjoy Immediately: Grab a spoon and dig in while the cake is still warm and gooey. The contrast of the fluffy cinnamon cake, the sticky swirl, and the tangy glaze creates a perfect bite that feels like a homemade treat made just for you.
