Ingredients
  

For the Smoothie Base:
  • 1 ½ cups coconut milk full-fat or light
  • 1 ripe banana
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon ground cinnamon optional
For the Chia Layer:
  • 3 tablespoons chia seeds
  • ¾ cup coconut milk
Optional Add-ins:
  • Shredded coconut
  • Sliced mango or pineapple
  • Chopped nuts or granola
  • Fresh berries

Method
 

  1. Blend coconut milk, banana, vanilla, and honey until smooth.
  2. Mix chia seeds with coconut milk and let thicken.
  3. Layer chia pudding and smoothie mix in jars.
  4. Chill for at least 2 hours and top with fruit or coconut before serving.
