Ingredients
  

For the Fish and Sauce:
  • 1 ½ pounds white fish fillets such as cod, halibut, or tilapia
  • 2 tablespoons olive oil
  • 3 tablespoons butter divided
  • 4 garlic cloves finely minced
  • 1 cup full-fat coconut milk
  • Juice and zest of 2 limes
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • Salt and freshly cracked black pepper to taste
Optional Add-ins:
  • 1 tablespoon fish sauce or soy sauce for extra depth
  • 1 –2 fresh red chilies sliced thin, for heat
  • Fresh cilantro or parsley chopped, for garnish
  • Lime wedges for serving

Method
 

  1. Season fish with salt, pepper, and paprika.
  2. Sear fillets in olive oil and butter until lightly golden. Remove from pan.
  3. Add garlic with butter to skillet, then stir in coconut milk, lime juice, zest, and spices.
  4. Simmer sauce until slightly thickened.
  5. Return fish to pan and cook 5–6 minutes more.
  6. Garnish with fresh herbs and lime wedges, serve hot.
