Ingredients
  

For the Chicken
  • 4 boneless skinless chicken breasts
  • 2 cups buttermilk
  • 2 large eggs whisked
  • 3 teaspoons salt
  • ½ teaspoon cayenne pepper
For the Coating
  • 1 ½ cups all-purpose flour
  • ½ cup breadcrumbs plain or Italian
  • 2 ½ teaspoons seasoned salt
  • 1 ½ teaspoon black pepper
  • ¾ teaspoon paprika
For Frying
  • 1 ½ cups vegetable oil

Method
 

  1. Soak chicken in buttermilk, eggs, salt, and cayenne.
  2. Coat chicken in seasoned flour and breadcrumbs.
  3. Fry in hot oil until golden and cooked through.
  4. Rest briefly and serve warm.
