Ingredients
  

For the Dish:
  • 1 ½ lbs baby potatoes halved
  • 1 lb fresh green beans trimmed
  • 6 slices thick-cut bacon chopped
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tbsp olive oil or bacon dripping
  • 1 packet ranch seasoning mix about 1 oz
  • ½ cup chicken broth
  • Salt and black pepper to taste
Optional Garnishes:
  • Fresh parsley or chives chopped
  • Grated cheddar cheese

Method
 

  1. Cook chopped bacon until crispy, set aside.
  2. Sauté onion and garlic in bacon drippings.
  3. Add potatoes and chicken broth, cover and cook until tender.
  4. Stir in green beans and ranch seasoning, cook until beans are tender-crisp.
  5. Return bacon, toss together, and serve hot.
