Cranberry Orange Muffins

Ingredients
  

For the Muffins:
  • 2 large eggs
  • ¾ cup milk whole milk gives the best texture
  • 1 teaspoon pure vanilla extract
  • 1 cup white granulated sugar
  • 2 cups all-purpose flour spooned and leveled
  • ½ teaspoon salt
  • 2 teaspoons baking powder make sure it’s fresh
  • Zest of 2 oranges
  • ½ cup vegetable oil
  • ½ cup fresh orange juice
  • cups fresh or frozen cranberries no need to thaw if frozen
Optional Add-ins:
  • ½ cup chopped walnuts or pecans
  • ¾ cup semi-sweet chocolate chips
  • 1 tablespoon sparkling sugar for topping
For Optional Glaze:
  • 1 cup confectioner’s sugar
  • 2 –3 tablespoons orange juice

Method
 

  1. Preheat oven to 400°F and line a 12-cup muffin tin.
  2. Mix dry ingredients in one bowl, sugar and zest in another.
  3. Add wet ingredients, then combine gently.
  4. Fold in cranberries and fill muffin cups.
  5. Bake 20–25 minutes until golden.
  6. Cool slightly and enjoy or glaze for sweetness.
