Ingredients
  

For the Pasta:
  • 20 oz cheese tortellini fresh or refrigerated
  • 1 tbsp olive oil
For the Cheesesteak Mix:
  • 1 lb beef sirloin or ribeye thinly sliced
  • 1 tbsp olive oil
  • 1 large onion thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 red bell pepper thinly sliced
  • 2 cloves garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
For the Provolone Sauce:
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup shredded provolone cheese
  • ½ cup shredded mozzarella
  • ½ tsp Worcestershire sauce
  • ¼ tsp red pepper flakes optional
Optional Garnishes:
  • Fresh parsley chopped
  • Extra provolone or mozzarella

Method
 

  1. Cook tortellini until al dente, drain, set aside.
  2. Sear beef strips with salt and pepper, remove from skillet.
  3. Sauté onions, peppers, and garlic until soft.
  4. Make provolone sauce with butter, flour, milk, cheese, Worcestershire.
  5. Combine pasta, beef, and veggies, toss with sauce.
  6. Garnish with parsley and cheese, serve hot.
