Ingredients
  

For the Chicken and Sauce:
  • 1.5 pounds boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 1 small yellow onion finely diced
  • 3 cloves garlic minced
  • 1 tablespoon tomato paste
  • 2 cups seeded and diced tomatoes
  • 1 can unsweetened coconut milk 14 ounces
  • Chopped fresh cilantro for garnish
  • Lime wedges for serving
Spices and Seasoning:
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • ¼ to ½ teaspoon freshly ground black pepper
  • ½ teaspoon cayenne pepper adjust to taste
  • 1 to 1½ teaspoons salt

Method
 

  1. Season chicken with spices and salt.
  2. Sear chicken in olive oil and set aside.
  3. Cook onion and garlic, stir in tomato paste and tomatoes.
  4. Add coconut milk and simmer.
  5. Return chicken and cook until tender.
  6. Finish with cilantro and lime.
