Ingredients
  

For the salad:
  • 1 pound shrimp peeled, deveined, and cooked
  • 2 medium cucumbers thinly sliced or diced
  • ½ cup red onion thinly sliced
  • ½ cup celery finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons sour cream or Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh dill or parsley chopped
  • Salt and black pepper to taste
Optional Add-ins:
  • ½ cup cherry tomatoes halved
  • 1 avocado diced
  • 1 teaspoon paprika or chili flakes for spice
  • Extra lemon wedges for garnish

Method
 

  1. Cook shrimp until pink, then chop.
  2. Slice cucumbers, onion, and celery.
  3. Whisk mayo, sour cream, lemon juice, Dijon, and herbs for dressing.
  4. Toss shrimp and veggies with dressing.
  5. Chill for 20 minutes before serving.
  6. Garnish with extra herbs or lemon.
