  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups cooked shredded chicken rotisserie works great
  • 2 cans white beans drained and rinsed
  • 1 can diced green chiles 4 oz
  • 2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon oregano
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • ½ cup sour cream
  • ½ cup heavy cream or half-and-half
  • 1 cup shredded Monterey Jack or mozzarella cheese
Optional Toppings:
  • Fresh cilantro
  • Crushed tortilla chips
  • Shredded cheese
  • Diced avocado
  • Lime wedges

Method
 

  1. Sauté onion and garlic in olive oil until soft.
  2. Stir in chicken and spices.
  3. Add beans, green chiles, and broth. Simmer 20 minutes.
  4. Mix in sour cream, heavy cream, and cheese until creamy.
  5. Serve warm with toppings like avocado, lime, or tortilla chips.
