Ingredients
  

For the Chicken and Sauce:
  • 1 ½ pounds boneless skinless chicken breasts or thighs
  • 1 can 10.5 ounces condensed cream of chicken soup
  • ½ cup chicken broth
  • ½ cup sour cream or plain Greek yogurt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
For the Stuffing Layer:
  • 1 box 6 ounces dry stuffing mix (any flavor you prefer)
  • 1 ½ cups chicken broth for preparing stuffing
  • 2 tablespoons unsalted butter melted

  • 1 cup frozen mixed vegetables peas, carrots, corn

  1. Prepare the Chicken: Place the chicken pieces in the bottom of your slow cooker in a single, even layer. Sprinkle both sides with garlic powder, thyme, black pepper, and salt, rubbing the seasonings gently into the meat to ensure every bite is flavorful from the inside out.
  2. Mix the Creamy Sauce: In a medium bowl, whisk together the condensed soup, ½ cup chicken broth, and sour cream until smooth and well combined. Pour this mixture evenly over the seasoned chicken, spreading it gently with a spoon to coat the pieces without moving them around too much.
  3. Prepare the Stuffing: In a separate bowl, combine the dry stuffing mix with the melted butter and 1 ½ cups chicken broth, stirring just until the crumbs are moistened. Do not overmix or the stuffing may become mushy during the long cooking process.
  4. Layer the Stuffing on Top: Spoon the prepared stuffing mixture evenly over the chicken and sauce, creating a uniform top layer that will steam and absorb flavors as it cooks. Press it down lightly so it stays in place, but avoid compacting it too firmly to maintain a fluffy texture.
  5. Add Optional Veggies (If Using): If you are adding frozen vegetables, scatter them evenly over the stuffing layer now. They will cook gently in the steam and add a sweet, colorful contrast to the savory casserole without requiring any extra prep work.
  6. Cook Low and Slow: Cover the slow cooker with its lid and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is tender and easily shreds with a fork. Avoid lifting the lid frequently, as this releases heat and can extend the cooking time significantly.
  7. Shred the Chicken (Optional): Once cooking is complete, use two forks to gently shred the chicken directly in the slow cooker, mixing it slightly with the sauce and stuffing for a more cohesive, casserole-style texture. If you prefer distinct pieces, you can skip this step and serve the chicken whole.
  8. Serve Warm and Cozy: Spoon generous portions onto plates, ensuring each serving has a balance of chicken, creamy sauce, and fluffy stuffing. Garnish with fresh parsley or a sprinkle of shredded cheese if desired, and serve immediately while hot and comforting.
