Ingredients
  

For the Stew:
  • lbs boneless skinless chicken thighs or breasts, cut into chunks
  • 1 large onion chopped
  • 3 garlic cloves minced
  • 2 bell peppers sliced (any color)
  • 2 medium carrots diced
  • 1 medium zucchini sliced
  • 1 can 14 oz crushed tomatoes
  • 1 cup low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ¼ teaspoon crushed red pepper flakes optional
  • Salt and black pepper to taste
  • ½ cup pitted Kalamata olives
  • 2 tablespoons chopped fresh parsley
  • Juice of half a lemon
Optional Add-ins:
  • Chickpeas for extra protein
  • Baby spinach for added greens
  • A handful of cherry tomatoes for sweetness
  • Feta cheese for garnish

Method
 

  1. Combine chicken, vegetables, tomatoes, broth, and seasonings in a slow cooker.
  2. Cover and cook on Low for 6–7 hours or High for 3–4 hours.
  3. Stir in olives, lemon juice, and parsley at the end.
  4. Serve hot with rice, couscous, or crusty bread.
