Method
- Sauté onions and garlic with spices until fragrant.
- Add chickpeas, bell pepper, tomatoes, tomato paste, and coconut milk to the slow cooker.
- Cook on low 6–7 hours or high 3–4 hours.
- Stir in spinach near the end.
- Serve with rice or pita, topped with lemon and herbs.
