For the Stew:

dried brown or green lentils
rinsed

medium onion
chopped

cloves
garlic
minced

medium carrots
diced
2
celery stalks
chopped

can
14.5 oz diced tomatoes
4
cups
vegetable or chicken broth
1
teaspoon
dried thyme
1
teaspoon
dried oregano
1
teaspoon
Italian seasoning
1
bay leaf
2
cups
baby spinach or kale
roughly chopped
Salt and black pepper to taste
1
tablespoon
olive oil
Optional Toppings:
Fresh basil or parsley
Grated Parmesan cheese
Crusty bread for serving
Method
Add all ingredients except spinach to a slow cooker.
Cook on low for 6–8 hours or high for 3–4 hours.
Stir in spinach 15 minutes before serving.
Serve with Parmesan and bread for dipping.
