Ingredients
  

For the Red Velvet Cookies:
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 ½ tsp red food coloring
  • ½ cup white chocolate chips optional, for inside the dough
For the White Cream Cheese Icing:
  • 4 oz cream cheese softened
  • 2 tbsp unsalted butter softened
  • 1 ½ cups powdered sugar
  • ½ tsp vanilla extract

Method
 

  1. Cream butter, sugars, egg, vanilla, and red food coloring.
  2. Mix in dry ingredients until dough forms.
  3. Scoop dough, shape cookies, and bake until edges set.
  4. Make cream cheese icing and spread on cooled cookies.
  5. Serve fresh or chilled for the best flavor.
