Ingredients
  

For the One-Pan Quinoa:
  • 1 cup quinoa rinsed thoroughly
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 zucchini chopped into small cubes
  • 1 tomato diced
  • 1 carrot diced
  • 1 cup broccoli florets
  • 2 1/2 cups vegetable broth or water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme or Italian seasoning
Optional Garnishes:
  • Fresh parsley or cilantro chopped
  • Sliced green onions
  • Crumbled feta or vegan cheese
  • Lemon wedges

Method
 

  1. Sauté onion and garlic in olive oil until fragrant.
  2. Add chopped vegetables and cook for 4–5 minutes.
  3. Stir in rinsed quinoa, vegetable broth, salt, pepper, and herbs.
  4. Simmer covered for 15–20 minutes until quinoa is fluffy.
  5. Fluff, garnish with parsley or lemon, and serve warm.
