For the Fajitas:
  • 2 pounds boneless skinless chicken breasts or thighs
  • 3 bell peppers sliced (use red, yellow, and green for color)
  • 1 large onion thinly sliced
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon crushed red pepper flakes optional
  • Salt and black pepper to taste
  • 1 lime juiced
  • ½ cup chicken broth or water
For Serving:
  • Warm flour or corn tortillas
  • Sour cream
  • Shredded cheese
  • Salsa or pico de gallo
  • Fresh cilantro
  • Lime wedges
Optional Add-ins:

Method
 

  1. Slice peppers, onions, and garlic. Season chicken with spices.
  2. Layer veggies in the crock pot, place chicken on top, and add broth and lime juice.
  3. Cook until tender, shred chicken, and mix everything together.
