Ingredients
  

For the Dirty Rice:
  • 1 pound medium shrimp peeled and deveined
  • 12 ounces smoked sausage andouille preferred, sliced into rounds
  • 1 ½ cups long-grain rice rinsed
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 3 ½ cups chicken broth
  • 2 tablespoons olive oil or butter
  • 2 teaspoons Cajun seasoning plus extra to taste
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional for heat
  • Salt to taste
Optional Add-ins and Garnishes:
  • 2 green onions chopped
  • Fresh parsley chopped
  • A squeeze of lemon juice
  • Hot sauce for serving

Method
 

  1. Brown sausage in oil, remove, and set aside.
  2. Sauté onion, pepper, celery, and garlic.
  3. Stir in rice and seasonings, toast briefly.
  4. Add broth and sausage, simmer covered 20 minutes.
  5. Stir in shrimp, cook until pink.
  6. Garnish with green onions and parsley. Serve hot.
