Ingredients
  

For the Scrambled Eggs:
  • 6 large eggs
  • 1 cup fresh spinach roughly chopped
  • 1 cup mushrooms sliced (white, cremini, or button)
  • 2 tablespoons butter or olive oil
  • 2 tablespoons milk or cream
  • Salt and black pepper to taste
Optional Add-ins:
  • ½ cup shredded cheese cheddar, mozzarella, or feta
  • 1 garlic clove minced
  • Fresh parsley or chives for garnish
  • A pinch of red pepper flakes for heat
  • A drizzle of hot sauce or salsa for serving

Method
 

  1. Slice mushrooms and chop spinach.
  2. Sauté mushrooms in butter until golden, then add spinach to wilt.
  3. Whisk eggs with milk, salt, and pepper.
  4. Cook eggs low and slow until soft.
  5. Fold in veggies and serve warm.
