Ingredients
  

For the Chili Base:
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 pound ground beef or turkey for a lighter version
  • 2 cans 14.5 oz each fire-roasted diced tomatoes
  • 1 can 15 oz tomato sauce
  • 1 cup beef broth
  • 1 can 15 oz kidney beans, drained
  • 1 can 15 oz black beans, drained
  • 1 can 4 oz diced green chiles
  • 1 bottle 12 oz dark ale or light beer
  • 2 tablespoons tomato paste
For the Seasoning:
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon oregano
  • ½ teaspoon cayenne pepper optional
  • Salt and pepper to taste
Optional Toppings:
  • Shredded cheese
  • Sliced avocado
  • Sour cream
  • Fresh cilantro
  • Crushed tortilla chips

Method
 

  1. Sauté onion, garlic, and beef until browned.
  2. Add tomatoes, paste, spices, broth, and beer. Simmer 30–40 minutes.
  3. Stir in beans and cook until thickened.
  4. Serve hot with your favorite toppings like cheese, avocado, or chips.
