For the Chicken:

Salt and freshly ground black pepper to taste

For the Sauce:

thick cut bacon diced

Thyme sprigs for garnish
Method
Season and flour chicken thighs.
Brown chicken until golden and remove.
Cook bacon, shallots, garlic, and thyme.
Add wine, broth, and mustards then simmer.
Stir in cream, return chicken, and finish with parsley.
