French Mustard Chicken aka Poulet à la Moutarde

Ingredients
  

For the Chicken:
  • 8 bone in skin on chicken thighs
  • Salt and freshly ground black pepper to taste
  • 2 teaspoons flour
  • 1 tablespoon extra virgin olive oil
For the Sauce:
  • 4 slices thick cut bacon diced
  • 2 large shallots minced
  • 2 cloves garlic minced
  • 1 teaspoon fresh thyme leaves
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup Dijon mustard
  • 2 tablespoons grainy mustard
  • 1/4 cup chopped parsley
  • Thyme sprigs for garnish

Method
 

  1. Season and flour chicken thighs.
  2. Brown chicken until golden and remove.
  3. Cook bacon, shallots, garlic, and thyme.
  4. Add wine, broth, and mustards then simmer.
  5. Stir in cream, return chicken, and finish with parsley.
