Prepare the Steak: Start by patting the steak pieces dry with paper towels. Dry steak sears better and develops a nice crust. Season all sides with salt and black pepper. Let the steak sit at room temperature for about 10 minutes so it cooks evenly.
Heat the Skillet: Place a large skillet over medium high heat. Add olive oil and let it heat until it looks shiny. A hot pan matters here since it locks in juices and builds flavor fast.
Sear the Steak Bites: Add the steak pieces in a single layer. Avoid crowding the pan so each piece browns properly. Let them cook without moving for about 2 minutes. Flip and cook another 2 minutes until the outside turns golden and the inside stays tender. Remove the steak and set aside.
Make the Garlic Butter: Lower the heat slightly and add butter to the same skillet. Once melted, stir in minced garlic. Cook gently for about 30 seconds until the garlic smells warm and fragrant. Keep stirring so it does not burn.
Combine and Finish: Return the steak bites to the skillet. Toss them in the garlic butter so each piece gets coated. Sprinkle dried parsley over the top and stir gently. Cook for one more minute, then turn off the heat.
