Garlic Potato Stacks

Thinly sliced potatoes layered with garlic butter and baked to golden perfection.

Ingredients
  

For the Potatoes
  • 4 large potatoes thinly sliced
  • 1 tbsp olive oil or melted butter
  • ½ tsp salt
  • ½ tsp black pepper
For the Garlic Butter
  • 3 tbsp butter melted
  • 3 garlic cloves minced
  • 1 tsp fresh thyme or rosemary optional
  • Pinch of salt and pepper

Method
 

  1. Preheat oven to 400°F (200°C). Grease muffin tin.
  2. Slice potatoes thinly.
  3. Mix garlic butter and layer between potato slices.
  4. Bake covered 30 minutes, uncovered 15–20 minutes.
  5. Cool slightly and serve warm.
