Glazed Gingerbread Muffins

Ingredients
  

For the Muffins:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ cup unsalted butter melted
  • ½ cup brown sugar
  • ½ cup molasses
  • 2 large eggs
  • ¾ cup milk
For the Glaze:
  • 1 cup powdered sugar
  • 2 –3 tablespoons milk
  • ½ teaspoon vanilla extract
Optional Add-ins:
  • ½ cup chopped pecans or walnuts
  • ½ cup mini white chocolate chips
  • Coarse sugar for sprinkling before baking

Method
 

  1. Preheat oven to 350°F, line muffin tin.
  2. Mix dry ingredients: flour, spices, baking powder, baking soda, salt.
  3. Whisk wet ingredients: butter, brown sugar, molasses, eggs, milk.
  4. Combine wet and dry to form batter, fold in extras if using.
  5. Bake 18–22 minutes until toothpick comes out clean.
  6. Whisk glaze ingredients and drizzle over warm muffins.
