Ingredients
  

For the Chicken Marinade:
  • 1 lb boneless skinless chicken breasts and thighs cut into bite size pieces
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • Juice from 1 large lemon
  • ½ teaspoon salt
  • ½ teaspoon freshly cracked black pepper
  • 4 large garlic cloves minced
  • 3 tablespoons Greek seasoning

Method
 

  1. Cut chicken into bite-size pieces.
  2. Combine olive oil, white wine vinegar, lemon juice, salt, pepper, garlic, and Greek seasoning. Coat chicken thoroughly.
  3. Marinate for at least 30 minutes in the fridge.
  4. Heat a skillet over medium-high heat and add a small drizzle of olive oil. It can also be prepared on a grill using skewers.
  5. Cook chicken in a single layer, turning occasionally, until golden and fully cooked.
  6. Let rest for a few minutes, then serve with pita, salad, or rice.
