Ingredients
  

For the Chicken:
  • lbs chicken breast cut into strips
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • ½ tsp oregano
  • Salt and black pepper to taste
  • Juice of 1 lime
For the Sweet Potato Wedges:
  • 2 large sweet potatoes cut into wedges
  • 2 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Salt and black pepper to taste
For the Avocado Salsa:
  • 2 ripe avocados diced
  • 1 small red onion finely chopped
  • 1 small tomato diced
  • 1 tbsp fresh cilantro chopped
  • Juice of 1 lime
  • Salt and black pepper to taste
For Garnish (Optional):
  • Fresh cilantro
  • Lime wedges

Method
 

  1. Roast sweet potato wedges until golden and crispy.
  2. Marinate chicken strips in olive oil, spices, and lime juice.
  3. Grill chicken until juicy and charred.
  4. Make avocado salsa by mixing avocado, tomato, onion, cilantro, and lime juice.
  5. Serve chicken with sweet potatoes, salsa, and fresh garnishes.
