Ingredients
  

For the Chicken Skewers:
  • 2 lbs boneless skinless chicken thighs or breasts cut into 1-inch cubes
  • ¾ cup coconut milk full-fat preferred
  • 3 tbsp soy sauce
  • 2 tbsp fish sauce
  • 3 tbsp lime juice
  • 2 tbsp brown sugar
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp lemongrass paste optional
  • 1 tsp red chili flakes optional for heat
  • 2 tbsp vegetable oil
For Serving & Garnish:
  • Fresh cilantro chopped
  • Lime wedges
  • Toasted sesame seeds optional
  • Peanut dipping sauce optional

Method
 

  1. Make coconut marinade and add chicken.
  2. Marinate at least 1 hour.
  3. Thread chicken onto skewers.
  4. Grill until charred and cooked through.
  5. Garnish and serve hot.
