Ingredients
  

For the Chicken:
  • 1 ½ pounds boneless skinless chicken breasts or thighs cut into bite-sized pieces
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • For the Sticky Sauce:
  • cup low-sodium soy sauce
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 garlic cloves minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 2 teaspoons water
For the Bowls:
  • 3 cups cooked rice white, brown, or jasmine
  • 2 cups steamed broccoli or green beans
  • 1 cup shredded carrots
  • 1 cucumber sliced

Method
 

  1. Sesame seeds and chopped green onions for garnish
  2. Cook chicken pieces in oil until golden and cooked through.
  3. Make sticky sauce with soy, honey, vinegar, garlic, and ginger.
  4. Thicken with cornstarch slurry, then coat chicken in sauce.
  5. Assemble bowls with rice, veggies, and sticky chicken.
  6. Garnish with sesame seeds and green onions before serving.
