Method
- Preheat oven to 375°F (190°C). Line or grease a 12-cup muffin tin.
- Whisk flour, oats, sugar, baking powder, baking soda, and salt in a large bowl.
- In another bowl, whisk egg, milk, oil (or melted butter), and vanilla.
- Combine wet and dry ingredients gently. Do not overmix.
- Fold in chocolate chips.
- Scoop batter evenly into muffin cups.
- Bake 18–22 minutes until a skewer comes out clean.
- Cool in pan briefly, then transfer to a wire rack.
