Ingredients
  

For the Muffins:
  • 1 ½ cups all-purpose flour spooned and leveled
  • 1 cup old-fashioned rolled oats
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup milk dairy or non-dairy
  • cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips semisweet, milk, or dark
Optional Add-ins:
  • ½ cup chopped nuts like walnuts or pecans
  • ½ cup dried fruit such as raisins or cranberries
  • 1 teaspoon cinnamon for a warm flavor twist
  • Extra rolled oats or coarse sugar for topping

Method
 

  1. Preheat oven to 375°F (190°C). Line or grease a 12-cup muffin tin.
  2. Whisk flour, oats, sugar, baking powder, baking soda, and salt in a large bowl.
  3. In another bowl, whisk egg, milk, oil (or melted butter), and vanilla.
  4. Combine wet and dry ingredients gently. Do not overmix.
  5. Fold in chocolate chips.
  6. Scoop batter evenly into muffin cups.
  7. Bake 18–22 minutes until a skewer comes out clean.
  8. Cool in pan briefly, then transfer to a wire rack.
