Ingredients
  

For the Chicken:
  • 1 tablespoon olive oil
  • 3 lbs chicken thighs bone in skin on
  • Salt and pepper
  • Italian seasoning divided
  • 3 to 4 thyme sprigs leaves only
For the White Wine Sauce:
  • 2 tablespoons butter
  • 1 medium onion diced
  • 3 garlic cloves chopped
  • 1 tablespoon flour
  • ½ cup white wine
  • 1 cup chicken stock
  • ½ cup heavy cream
  • Salt and pepper to taste

Method
 

  1. Season chicken thighs with oil, herbs, salt, and pepper.
  2. Roast until skin turns golden and crisp.
  3. Cook onion and garlic in butter.
  4. Stir in flour, wine, stock, then cream.
  5. Spoon sauce over chicken and serve warm.
