Homemade Chicken Marsala

Tender chicken in a rich Marsala wine and mushroom cream sauce.

Ingredients
  

For the Chicken and Sauce:
  • 1 1/4 lbs chicken breast sliced thin
  • 1/4 cup all purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp onion powder
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
For the Marsala Sauce:
  • 8 oz brown button mushrooms sliced
  • 2 garlic cloves minced
  • 3/4 cup reduced sodium chicken stock
  • 3/4 cup dry Marsala wine
  • 1/2 cup heavy whipping cream
  • 2 tbsp fresh parsley chopped

Method
 

  1. Season and flour chicken evenly.
  2. Brown chicken in olive oil and butter, then remove.
  3. Cook mushrooms and garlic in the same skillet.
  4. Add Marsala wine and stock, then simmer.
  5. Stir in cream, return chicken, and finish with parsley.
