Ingredients
  

For the Sandwiches:
  • 8 slices sourdough bread
  • 2 cups cooked chicken breast shredded or sliced
  • 1 cup chipotle mayonnaise store-bought or homemade
  • 2 cups shredded smoked gouda or sharp cheddar
  • 4 tablespoons butter softened
Optional Add-ins:
  • Caramelized onions for sweetness
  • Sliced tomatoes for freshness
  • Pickled jalapeños for added spice
  • Fresh spinach or arugula for a peppery bite

Method
 

  1. Butter bread slices and spread chipotle mayo inside.
  2. Layer chicken, cheese, and any extras.
  3. Close sandwiches and toast in skillet until golden, 4–5 minutes per side.
  4. Slice and serve warm.
