Ingredients
  

For the Chicken and Marinade:
  • 4 to 5 pounds boneless skinless chicken thighs
  • ½ cup packed light brown sugar
  • ½ cup ketchup
  • ½ cup light soy sauce
  • ½ cup pineapple juice
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon coarse black pepper
For Serving:
  • ½ cup sliced green onions
  • 1 fresh pineapple sliced or one can pineapple slices drained

Method
 

  1. Whisk all marinade ingredients until smooth.
  2. Coat chicken thoroughly and marinate for several hours.
  3. Grill chicken over medium heat until caramelized and cooked through.
  4. Rest briefly and garnish with green onions before serving.
