Ingredients
  

For the Muffins:
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ¾ cup Greek yogurt or sour cream
  • ½ cup unsalted butter melted and cooled
  • cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
For the Crumb Topping:
  • ½ cup all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup unsalted butter cold and cubed
  • Pinch of salt
For the Lemon Glaze:
  • 1 cup powdered sugar
  • 2 –3 tablespoons fresh lemon juice
  • ½ teaspoon lemon zest

Method
 

  1. Preheat oven to 375°F and prepare muffin tin.
  2. Mix dry ingredients in one bowl, wet in another.
  3. Combine gently until just mixed.
  4. Top with prepared crumb topping.
  5. Bake 18–22 minutes until golden.
  6. Cool slightly, then drizzle with lemon glaze.
