Ingredients
  

For the Pilaf:
  • 1 cup long-grain white rice like basmati or jasmine
  • 2 tablespoons butter or olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 2 cups chicken or vegetable broth
  • Zest of 1 lemon
  • Juice of 1 lemon about 3 tablespoons
  • Salt and black pepper to taste
Fresh Additions:
  • 2 tablespoons chopped parsley
  • 1 tablespoon fresh dill or mint optional
Optional Toppings:
  • ¼ cup toasted pine nuts or slivered almonds
  • Extra lemon wedges for serving

Method
 

  1. Toast rice in butter until golden.
  2. Add onion and garlic, cook until soft.
  3. Stir in broth, lemon juice, and zest. Cover and simmer for 15 minutes.
  4. Rest for 5 minutes, then fluff with a fork.
  5. Stir in parsley, garnish with nuts, and serve with lemon wedges.
